Raw Cinnamon Roll Bites
Sometimes you go into making a recipe with a different plan than what you get in the end, but luckily the result was still just as delicious. I made this recipe to mimic Meet the Source’s raw cinnamon rolls and though they don’t have the classic cinnamon roll shape, the flavors turned out amazing!
These bites are entirely raw, gluten free, vegan, & nut free. Meet the Source treats are to die for, but unfortunately I have a nut sensitivity so I can’t have them as often as I wish. So, I decided to make a completely allergy friendly version, which you can try for yourself.
It is possible to make this recipe into actual rolls, but it is a work in progress! These gooey cinnamon roll bites are just as irresistible.
Ingredients
Dough
1 cup oat flour (grind oats to a flour in food processor)
1 cup flax seed meal
1 cup pumpkin seeds
1 tsp cinnamon
1/4 tsp salt
3 tbsp coconut oil melted
3 tbsp maple syrup
Filling
1 1/2 cups pitted & chopped dates
1/2 cup water
1/4 tsp salt
1/2 tsp vanilla
1 tsp cinnamon
1/4 cup golden or regular raisins
Icing
1/4 cup melted coconut butter
1/4 cup melted coconut oil
1/2 tsp vanilla
Instructions
In a coffee grinder or food processor, bring pumpkin seeds to a ground flour like texture. Add oat flour, flax meal, salt, & cinnamon. Process until combined.
Place dry mixture in a bowl and add coconut oil and maple syrup. Mix until combined.
In the food processor, break down dates & raisins. Then, add water, cinnamon, salt, vanilla, & puree until smooth.
Add dry ingredients & pulse both in the food processor until combined.
Line a baking sheet with parchment paper. Spread the mixture into a rectangle. Use rolling pin to flatten. Then, much like a sushi roller, roll the dough tightly. Place the wrapped roll in the freezer for 30 minutes.
While freezing, combine melted coconut oil, coconut butter, & vanilla to make the icing.
Remove roll & slice into rounds of 1 to 1.5 inch width. Place the rounds on a parchment lined baking sheet. Drizzle icing onto the rounds with a spoon. Then, return to freezer for 10 minutes to harden icing.
Remove the rounds from freezer & enjoy! These are best kept in the refrigerator for up to 10 days.
