Lemon & Blueberry Pancakes
A recipe that tastes like my childhood with a twist. My Dad's favorite breakfast always includes a side of blueberry pancakes. I grew up knowing that the weekends meant whatever we were having, there would also always be blueberry pancakes to share.
Now living on my own, I started to miss this sweet treat and decided to create my own healthy rendition to bring over & enjoy with my sisters & parents. This recipe is tangy sweet, and proven to please even the pickiest eaters.
Ingredients
Pancake mix (I used Birch Benders Gluten Free & Paleo Mix)
Meyer Lemons (Need approximately 2 cups worth)
1 pack blueberries
Maple syrup
Instructions
Using instructions on package mix, substitute the amount of water used with meyer lemon juice. For this package, 2/3 cups meyer lemon juice per 3/4 cups of the mix.
In a separate sauce pan, heat 1/2 a cup of syrup with 1 1/2 cup blueberries. Mix on medium until half of the blueberries have broken up.
Stack, top with syrup & lemon zest, & serve.
